Handle: Integral oval holly handle with brass and leather spacers.
Notes: 72g. 26mm deep. Oval handles are perhaps the simplest form of handle, though they can be challenging to make. We really like the clean lines and simplicity of this handle shape for smaller knives like steak and paring knives. It’s also great for big knives and its ambidextrous design makes it more broadly useful than the Japanese D-handle (see next knife).

Handle: Integral right-handed d-handle cocobolo with leather and buckeye spacers.
Notes: 179g. 51mm deep. D-shape handles are oval handles that have a ridge running down one side. This ridge creates a reference point for your hand to improve the consistency of the grip, plus it looks good ;-). This is a traditional Japanese handle shape and we love its simplicity and elegance.

170mm Holly Chinese Chef's Knife

Handle: Blackwood ferrule, octagonal holly handle.
Notes: 301g. 68 mm deep. Heavy workhorse grind. Octagonal hidden-tang handles like this one are a very traditional Japanese handle style. They would usually be made with a ferrule of horn or wood and magnolia or chestnut wood as the main handle material. Our hidden-tang handles (all our handles) are epoxied on, are permanent, and feature stabilized wood.

170mm Black Maple Gyuto

Handle: Octagonal integral black-dyed maple burl handle with leather spacer.
Notes: 152g. 49mm deep. This knife sports an integral bolster version of the octagonal handle. This is an excellent construction type as it minimizes wood/metal joints, which makes it especially durable in the kitchen environment. The integral octagonal construction is also a little easier to clean than a standard hidden-tang handle.

5.75" Coffee Boning Knife
Blade: Sawblade @HRC 64.
Handle: Full-tang coffeebag laminate handle with brass pins.
Notes: 109g. 19mm deep. This full-tang handle is made with coffeebag “scales” pinned and epoxied to either side of the tang. The added weight in a full-tang knife is useful in this style of knife to make the balance firmly in the hand and the tip feel “fast” in use.

Handle: Integral western maple burl handle with leather, brass, and blackwood spacers.
Notes: 171g. 47mm deep. A classic western-style handle, the integral bolster swells up to a “cokebottle” shape smooth handle. This integral hidden-tang design is excellent for durability in a kitchen knife and also lets the handle materials shine with minimal interruptions.

Handle: Westernized octagonal integral mystery burl handle with leather and blackwood spacers.
Notes: 152g. 50mm deep. One of our favorite handle designs, the westernized octagonal integral handle combines all of the ease of cleaning and durability of the integral bolster design with the durability of the hidden-tang construction, the visual interest and palm swell of the western handle shape, and the facets of the traditional octagonal design. There is a lot going on, and we like it.
