3.5" Mulberry Bird & Trout

Blade: Sawblade @HRC 64.

Handle: Full-tang mulberry handle with copper pins.

Notes: Bird and trout knives are smaller and thinner than most belt knives as they need to work into tighter places and for making delicate cuts and are not generally used for the heavy lifting required by larger animals.

82g. 21mm deep. Right- or left-handed sheath - your choice (turnaround time 2-3 weeks).

Sources: Sawblade - Douglas, Ga.
Mulberry - Arnoldsville, Ga.

4.25" Spalted Maple Burl Hunting Knife

Blade: Roller Bearing @HRC 64.

Handle: Westernized octagonal integral spalted maple burl handle with leather and orange G10 spacers.

Notes: This knife has a classic hunting blade profile and grind, perfect for field dressing larger animals and for general use. The Spalted Maple burl handle is faceted for improved grip and also has a soft tail so that the handle won’t dig into your waist when it is on your belt. The G10 spacer adds visibility so you don’t lose it in the leaves.

119g. 26mm deep. Right- or left-handed sheath - your choice (turnaround time 2-3 weeks).

Sources: Steel - Roller bearing, machine shop, Birmingham, Alabama.

Notes: This is one of our favorite blade profiles for heavy-duty skinning - think wild hogs and their armor-like skin. The handle is faceted and set up for standard and reverse grips, so the knife is equally comfortable pulling or pushing.

130mm Black Maple Burl Honesuki

Blade: Roller Bearing @HRC 64.

Handle: Octagonal integral black-dyed maple burl handle with leather spacer.

Notes: We thought it might be fun to do a traditional Japanese knife for trimming and jointing poultry. This knife is single-beveled for the right-handed user and would be a great choice for any prep work.

Sources: Steel - Roller bearing, machine shop, Birmingham, Alabama.
Maple - Wolfskin, Ga.

100mm Redbud Hankotsu

Blade: Roller Bearing @HRC 64.

Handle: Full-tang octagonal redbud handle with brass pins.

Notes: Another traditional Japanese knife for hanging animal breakdown. This knife is designed for a stabbing grip in both the pull and push movements and has a double taper in the handle so that as you pull it down, the handle seats into the hand more securely. We built this hankotsu for a small to medium hand.

Redbud - Athens, Ga.

7.25" Copper Beech Breaking Knife

Blade: Roller Bearing @HRC 64.

Handle: Westernized octagonal integral spalted copper beech handle with leather and copper spacers.

Notes: With the breaking knife, we are beginning to move our discussion out of breakdown and into portioning large cuts into primals, though some people use a knife like this one for removing shoulders or back hams from a carcass as it provides extra reach.
